In these lands where villages are named after olive trees and oil, a product is being cultivated that has been catalogued since 2001 as D.O. of Bajo Aragon. Mis Raíces is elaborated during the first fortnight of November with olives from the Empeltre 80% and Arbequina 20% varieties, when they are at their optimum ripening point. The nose recalls a medium-high fruity intensity with hints of fresh grass and a smooth touch of fennel, characteristic of the Empeltre olive; in the mouth, it flows and its sweet flavour is highlighted against its bitterness and slight spiciness. We also find nuts flavours, such as almonds and walnuts, both very characteristic of the Empeltre olive; to the eye, it looks clean, with a yellow colour that ranges from bright to old gold.
